4 (8 inch) flour tortillas
1 tbsp butter or margarine, melted
1 ½ cups shredded cheese – Tex Mex or Mexican blend, cheddar or Monterey Jack
2 whole green onions, finely minced
2 tbsp minced green chillies (mild -from a can)
Salsa as garnish
Preheat a non stick skillet. Brush one side of a flour tortilla with melted butter. Place tortilla, butter side down on the skillet. Sprinkle cheese, green onion and chillies on one half of the tortilla.
Fold tortilla in half to cover cheese area. Cook till the bottom is golden, then flip and cook the other side until cheese is melted.
Cut into wedges and serve with salsa.
