Baked Apple Compote
6 to 8 apples, peeled, cored and sliced
3 tbsp fresh lemon juice
2 tbsp honey
¼ cup unsweetened apple juice
1 stick cinnamon
½ tsp allspice
¼ tsp nutmeg
½ tsp vanilla
2 tbsp dried currants or cranberries
½ cup plain low-fat frozen yogurt for topping (optional)
Preheat oven to 350 degrees. Lightly butter a 2 quart baking dish. Toss the apples with the lemon juice in the baking dish.
Add the remaining ingredients (except yogurt) and toss together. Bake in preheated oven for 45 minutes to 1 hour. Serve warm or room temperature (with or without frozen yogurt).
